Recipe Saturday - Homemade Peanut Butter Ice Cream

This is my absolute favorite homemade ice cream.  Of course, I LOVE anything that involves peanut butter.  I could eat the stuff by the spoonful right out of the jar, but you mix it with cream and sugar and turn it in to frozen Heaven.  I tell you, your eyes will bug out with joy as you are eating this stuff!

I first experienced this ice cream at a party that our friends, Steve and Erin, were hosting.  From what I understand it is a favorite recipe in their family and now it is becoming a favorite in our extended family too.

I requested this ice cream as the dessert for my birthday this July and since then several family members have asked for a copy of it.  It's that good!  We are a family of "foodies" who know good food and love good food, so when several in our family request a copy of a recipe you know it must be good.

At my bridal shower several years ago I was given favorite recipes by those who attended.  Erin was kind enough to share this recipe with me then.  I'm so thankful that she did.

It does take a while to make, but it is so worth it in the end.

Since Labor Day weekend is upon us and we are saying goodbye to the Summer season, I thought this would be a great recipe to share to help cool you off as you kiss the Summer goodbye.  Enjoy!

Peanut Butter Ice Cream


Ingredients

3 eggs
1 1/2  C Sugar
1 QT half & half
1 large instant vanilla pudding (6oz)
1 can sweetened condensed milk 14oz
1 can evaporated milk 14oz
1 tbs vanilla
2 C  peanut butter chunky


Directions

MAKE SURE ALL YOUR COLD LIQUIDS ARE VERY COLD!
Use a wand immersion blender to blend the all the ingredients VERY well. Make sure the pudding is blended with the other ingredients before adding the Peanut Butter.  Then pour into the ice cream maker, make sure you use plenty of ice and rock salt if your maker requires them. The mix must be kept very cold while churning!!!
